Amaranth is a dark red to purple azo dye used as a food dye and to color cosmetics. The name was taken from amaranth grain, a plant distinguished by its red color and edible protein-rich seeds. Amaranth is an anionic dye. It can be applied to natural and synthetic fibers, leather, paper, and phenol-formaldehyde resins. As a food additive it has E number E123. Amaranth usually comes as a trisodium salt. It has the appearance of reddish-brown, dark red to purple water-soluble powder that decomposes at 120 °C without melting. Amaranths water solution has absorption maximum at about 520 nm.
Carmoisine is a synthetic red food dye from the azo dye group. It usually comes as a disodium salt. Carmoisine is a red to maroon powder. It is used for the purposes where the food is heat-treated after fermentation.
Erythrosine, also known as Red No. 3, is an organoiodine compound, specifically a derivative of fluorone. It is cherry-pink synthetic, primarily used for food coloring. Erythrosine is the disodium salt of 2,4,5,7-tetraiodofluorescein. Its maximum absorbance is at 530 nm in an aqueous solution, and it is subject to photodegradation.Erythrosine used as a printing inks, biological stain, dental plaque disclosing agent, sensitizer for orthochromatic photographic films.Erythrosine is commonly used in sweets such as some candies and popsicles, and even more widely used in cake-decorating gels. It is also used to color pistachio shells.

Brilliant Blue is a synthetic food colorant (aka artificial color) with a greenish-blue hue used to color beverages, dairy powders, jellies, candies, condiments, icings, syrups, extracts, and many drugs and cosmetics. Brilliant Blue is also used to color paper or paper board that comes into contact with foods. It is often used together with FD&C Yellow No. 5 to make green food coloring. Brilliant Blue is manufactured by a condensation reaction of benzaldehyde-o-sulfonic acid and α-(N-ethylanilino)-m-toluenesulfonic acid. Brilliant Blue is very soluble in water, glycerol, and glycol, and slightly soluble in ethanol. Brilliant Blue is stable in a wide range of pH.
Allura Red AC Dye is a red azo dye. It is used as a food dye and has the E number E129. Allura Red AC was originally introduced in the United States. It has the appearance of a dark red powder. Allura Red AC usually comes as a sodium salt, but can also be used as both calcium and potassium salts. It is soluble in water; in solution, its maximum absorbance lies at about 504 nm.Allura Red AC has fewer health risks associated with it in comparison to other azo dyes.
