Glycerol monostearate is an organic molecule used as an emulsifier. It is a glycerol ester of stearic acid. It occurs naturally in the body as a by-product of the breakdown of fats, and is also found in fatty foods. Glycerol monostearate is a food additive used as a thickening, emulsifying, anti-caking, and preservative agent; an emulsifying agent for oils, waxes, and solvents; a protective coating for hygroscopic powders; a solidifier and control release agent in pharmaceuticals; and a resin lubricant. It is also used in cosmetics and hair care products. It is largely used in baking preparations to add "body" to the food. It is responsible for giving ice cream and whipped cream its smooth texture.

Glycerol Distearate

Glycerol distearate is a mixture of diacylglycerols, mainly distearoylglycerol, together with variable quantities of mono- and triacylglycerols. It contains 8.0 per cent to 22.0 per cent of monoacylglycerols, 40.0 per cent to 60.0 per cent of diacylglycerols and 25.0 per cent to 35.0 per cent of triacylglycerols, obtained by partial glycerolysis of vegetable oils containing triacylglycerols of palmitic or stearic acid or by esterification of glycerol with stearic acid 50 (type I), stearic acid 70 (type II) or stearic acid 95 (type III) . The fatty acids may be of vegetable or animal origin.

Glycyrrhizin

Glycyrrhizin is the main sweet-tasting compound from liquorice root. It is 30 to 50 times as sweet as sucrose. Chemically, glycyrrhizin is a triterpenoid saponin glycoside of glycyrrhizic acid. Upon hydrolysis, the glycoside loses its sweet taste and is converted to the aglycone glycyrrhetinic acid plus two molecules of glucuronic acid. Although sweet, the taste sensation of glycyrrhizin is different from that of sugar. The sweetness of glycyrrhizin has a slower onset than sugar, and lingers in the mouth for some time. Unlike the artificial sweetener aspartame, glycyrrhizin maintains its sweetness under heating. Glycyrrhizin is used as a flavoring in some candies, pharmaceuticals, and tobacco products.
