 Natamycin(pimaricin) is a polyene macrolide antifungal agent produced by Streptomyces natalensis, Streptomyces chatanoogen and some other Streptomyces spp. It is the sole antifungal food bio-preservative approved in the world, which could inhibits the growth of moulds and yeasts broadly and high-effectively and is safe to human body. The use of Natamycin does not change the nutritional value, appearance, flavor and texture of foods. Until now, natamycin has been approved as food preservative in more than 40 countries and applied widely in cheese, meat food, cakes, fruit juice/sauce/salad, salted products and other foods. In China, natamycin was approved as food preservative in 1996 and could be used in cheese, meat food, Guangdong-flavor-moon cakes, cake surface,  fruit juices and easily-mouldy food processing devices et al. Nisin is a natural anti-microbial agent used as a preservative in heat
processed and low pH foods. Its anti-microbial activity is used against a
wide range of gram-positive bacteria and their spores, which cause food
spoilage. It especially inhibits heat-resistant bacilli, such as B.
Stearothermophilus, C. Butyricum and L. monocytogenes. Nisin alone is
not effective against gram-negative bacteria or yeasts and molds. Research
has shown that Nisin in combination with chelating agents such as EDTA
or nonionic surfactants such as Polysorbate 20, shows potent bactericidal
activity against gram-negative organisms.

Potassium Sorbate is stable in a sealed condition, but when exposed to humid air, it is easy to absorb water and oxidize to discolor. The potassium sorbate plays well to thermal stability with the decomposition temperatures up to 270 ℃.

Potassium Sorbate (and potassium sorbate) can not only effectively inhibit the activity of molds, yeasts and aerobic bacteria, but also prevent the growth and reproduction of botulinum, staphylococcus, salmonella and other harmful microorganisms. Sodium benzoate is a preservative. It is bacteriostatic and fungistatic under acidic conditions.
